Ingredients

Pasta
  • 8 ounces spaghetti
Sauce Base
  • 2 tablespoons olive oil For sautéing
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cooked lobster meat, chopped Or substitute with shrimp or chicken
  • 1/2 cup grated Parmesan cheese Divided for sauce and garnish
  • to taste Salt and pepper
Garnish
  • to taste Fresh parsley For garnish

Method

Cooking the Pasta
  1. In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente, saving a cup of pasta water before draining.
Making the Sauce
  1. In a large skillet over medium heat, add the olive oil and sauté the minced garlic for about 1 minute until fragrant.
  2. Pour in the heavy cream and simmer gently for about 2-3 minutes until it thickens slightly.
  3. Add the chopped lobster and half of the Parmesan cheese, stirring until well mixed and the lobster is heated through. Season with salt and pepper to taste.
Combining and Serving
  1. Gently toss in the drained spaghetti along with a little reserved pasta water to help the sauce cling to the noodles. Stir until well-coated.
  2. Transfer to serving plates and garnish with remaining Parmesan and fresh parsley.

Notes

For best results, consider buying pre-cooked lobster to save time. Don’t skip the pasta water as it adds creaminess to the sauce.
