  • 1 cup pastina (tiny pasta stars)
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms any variety (shiitake, cremini, or button mushrooms work wonderfully)
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream because life is too short for skim!
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Cooking Steps
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced mushrooms and gently sauté them until they are golden brown and fragrant—about 5-7 minutes.
  3. Once the mushrooms have turned a lovely golden hue, toss in the minced garlic and stir for about a minute, until it becomes aromatic.
  4. Pour in the vegetable or chicken broth and bring it to a boil.
  5. Once bubbling, add the pastina to the pot, lower the heat to a simmer, and cook according to package instructions—usually about 5 minutes.
  6. When the pastina is al dente, stir in the heavy cream and season with salt and pepper to taste. Cook for another minute or two. If it seems too thick, add a splash more broth to thin it to your desired creaminess.
  7. Scoop out the tender pasta stars into bowls, sprinkle with fresh parsley, and serve.

Notes

Use fresh ingredients for the best flavor. You can switch up mushrooms or add spinach or peas for extra nutrition. If the cream sauce is too thick, thin it with extra broth or water.
