Preparation
- Preheat your oven to 350°F (180°C).
- In a large bowl, combine flour, sugar, baking powder, and ground pistachios. Stir until well blended.
- In another bowl, combine softened butter and sugar. Mix until light and fluffy.
- Gradually add eggs, milk, and vanilla extract to the butter mixture. Mix until combined.
- Slowly incorporate the dry mixture into the wet mixture, stirring gently.
- Grease and flour your cake pan, then pour in the batter and smooth it out.
Baking
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
Frosting
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once the cake is completely cool, spread the frosting over the top and sprinkle with chopped pistachios.
Notes
For an extra layer of flavor, toast your chopped pistachios before adding them as a garnish. Store leftovers covered in the fridge for up to three days.
