  • 1 cup salsa verde (store-bought or homemade)
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro (for garnish, optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat.
  3. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  4. Sear the chicken for about 3-4 minutes on each side until golden.
  5. In a bowl, mix together the salsa verde and heavy cream.
  6. Pour the creamy salsa verde mixture over the seared chicken and top with shredded cheese.
Baking
  1. Place the skillet in the preheated oven and bake for about 25-30 minutes.
  2. Check that the chicken is cooked through and the cheese is bubbling and golden.
  3. Remove from the oven and sprinkle with fresh cilantro if desired.
  4. Serve with rice, tortillas, or your favorite side.

Notes

Don't worry if your sauce looks a bit lumpy. It's all part of the charm! For a dairy-free option, substitute with lactose-free cream or coconut cream. You can also add black beans or corn to enhance nutrition and flavor.
