  • 1 cup frozen spinach, thawed and drained
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked shrimp, chopped or crab meat, if you’re feeling fancy!
  • ½ cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes for that zing!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese and sour cream until smooth.
  3. Stir in the shredded Monterey Jack cheese and chopped shrimp (or crab if you’re going all out).
  4. Add the thawed spinach, green onions, garlic powder, onion powder, salt, and pepper. If you’re up for a little heat, sprinkle in the red pepper flakes.
  5. Spread the mixture into a baking dish.
Baking
  1. Bake in the preheated oven for 25-30 minutes until bubbly and slightly golden on top.
Serving
  1. Serve warm with tortilla chips, sliced baguette, or fresh veggie sticks.

Notes

Don’t worry if your dip looks a little lumpy—it’s all part of the magic! Those lumps are just pieces of shrimp or crab waiting to surprise your guests. For extra zing, consider adding artichoke hearts or lemon juice. Leftovers can be stored in an airtight container and microwaved for a quick snack.
