- In a skillet over medium heat, melt the butter. Once bubbly, add the minced garlic and sauté for about 30 seconds.
- Add the chopped spinach to the skillet and sauté for about 2-3 minutes until wilted.
- Pour in the heavy cream (or milk) and stir to combine. Let it heat through for a minute.
- Crack the eggs directly into the skillet, gently stir, and season with salt and pepper.
- Cover the skillet and cook the eggs for about 4-5 minutes until the whites are set but yolks remain slightly runny.
- Sprinkle with Parmesan cheese if desired, serve immediately, and enjoy!
Notes
You can prepare the spinach mixture ahead of time and store it in an airtight container in the fridge. Reheat and add eggs when ready to eat. If the sauce looks a bit lumpy, that’s part of the charm.
