  • 1 piece pre-made pie crust Use a store-bought crust for convenience.
Filling
  • 1 cup fresh spinach Can substitute with frozen spinach.
  • 1 cup crumbled feta cheese
  • 1 tablespoon olive oil For sautéing the onions.
  • 1 small onion, finely chopped Enhances flavor profile of the quiche.
  • 3 large eggs
  • 1 cup heavy cream Can substitute with milk for a lighter version.
  • Salt and pepper to taste
  • A pinch of nutmeg Optional but recommended for added flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). This step is crucial—don't skip it unless you want your quiche to resemble a sad, undercooked pancake.
  2. In a skillet, heat the olive oil over medium heat. Toss in the chopped onions, and cook until they’re soft and translucent (about 5 minutes).
  3. Stir in the spinach and cook just until wilted (about 2 minutes). Remove from heat and let cool slightly.
Mixing
  1. In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
  2. In the pie crust, spread the sautéed spinach and onions evenly. Sprinkle the crumbled feta cheese on top and then pour the egg mixture over everything.
Baking
  1. Pop the quiche into the preheated oven and bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.
  2. Allow the quiche to cool for a few minutes before slicing.
