- Preheat your oven to 375°F (190°C). This step is crucial—don't skip it unless you want your quiche to resemble a sad, undercooked pancake.
- In a skillet, heat the olive oil over medium heat. Toss in the chopped onions, and cook until they’re soft and translucent (about 5 minutes).
- Stir in the spinach and cook just until wilted (about 2 minutes). Remove from heat and let cool slightly.
Mixing
- In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
- In the pie crust, spread the sautéed spinach and onions evenly. Sprinkle the crumbled feta cheese on top and then pour the egg mixture over everything.
Baking
- Pop the quiche into the preheated oven and bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.
- Allow the quiche to cool for a few minutes before slicing.
