Ingredients
  

For the Chicken Skillet
  • 1 pound chicken breasts, cut into bite-sized pieces
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes (packed in oil and drained)
  • 1 cup heavy cream Can be substituted with half-and-half or a mix of Greek yogurt and milk.
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • for garnish Fresh basil Optional but encouraged.

Method
 

Preparation
  1. Season the chicken pieces with salt and pepper.
  2. In a large skillet over medium heat, add the olive oil. Once hot, toss in the chicken and cook until golden brown, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Stir in the sun-dried tomatoes and cook for another minute.
  5. Pour in the heavy cream and chicken broth, and sprinkle in the Italian seasoning. Bring to a gentle boil and let it simmer for about 5 minutes until thickened.
  6. Toss in the fresh spinach and wait until wilted, then add the Parmesan cheese. Stir until combined.
  7. Plate the dish and garnish with fresh basil if desired.

Notes

For best results, avoid overcrowding the skillet to prevent steaming the chicken. Additionally, feel free to add leftover veggies such as zucchini or bell peppers for extra flavor.
