  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil For searing the chicken
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped (not packed in oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach Baby spinach works great!
  • Fresh basil leaves For garnish, optional

Preparation and Cooking
  1. Pat the chicken breasts dry and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside. In the same skillet, mix the heavy cream, sun-dried tomatoes, garlic powder, and onion powder. Let it simmer for about 3 minutes.
  4. Gradually whisk in the Parmesan cheese until it melts into the sauce, creating a creamy texture.
  5. Add the fresh spinach and let it wilt for a minute or two.
  6. Return the chicken to the skillet, letting it soak in the creamy sauce for another 2 minutes. Optionally, garnish with fresh basil leaves before serving.

Notes

Don't rush the searing for a golden crust on the chicken. You can add veggies like mushrooms or bell peppers for extra crunch. For a lighter version, substitute half and half for the heavy cream.
