Preparation and Cooking
- Pat the chicken breasts dry and season both sides generously with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, mix the heavy cream, sun-dried tomatoes, garlic powder, and onion powder. Let it simmer for about 3 minutes.
- Gradually whisk in the Parmesan cheese until it melts into the sauce, creating a creamy texture.
- Add the fresh spinach and let it wilt for a minute or two.
- Return the chicken to the skillet, letting it soak in the creamy sauce for another 2 minutes. Optionally, garnish with fresh basil leaves before serving.
Notes
Don't rush the searing for a golden crust on the chicken. You can add veggies like mushrooms or bell peppers for extra crunch. For a lighter version, substitute half and half for the heavy cream.
