  • 8 ounces spaghetti or your pasta of choice
Sauce Ingredients
  • 1/2 cup sun-dried tomatoes, chopped preferably oil-packed for extra flavor
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste salt and pepper
  • Fresh basil leaves for garnish optional but adds a nice touch

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, saving about 1/2 cup of pasta water.
Preparing the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Sauté the sun-dried tomatoes for about a minute.
  2. Add the minced garlic and stir until fragrant, about 30 seconds.
  3. Lower the heat, add the heavy cream, and stir until well combined.
  4. Gradually add the reserved pasta water until the desired sauce consistency is achieved.
  5. Stir in the grated Parmesan cheese until melted. Season with salt and pepper to taste.
Combining and Serving
  1. Toss the cooked spaghetti in the creamy sauce until coated.
  2. Plate the spaghetti and garnish with fresh basil if desired.

Notes

For added protein, consider incorporating cooked chicken or shrimp. The sauce also pairs well with sautéed spinach or broccoli for added nutrition. Don't worry about any lumps in the sauce; embrace them as part of the cooking process.
