Ingredients
  

Pasta
  • 8 oz linguine pasta or your favorite pasta
Shrimp
  • 1 lb large shrimp, peeled and deveined don’t worry; your fingers won’t turn orange!
Cooking Essentials
  • 2 tbsp olive oil
  • 4 cloves garlic, minced because vampires have no place here
  • 1 cup heavy cream
  • 1/2 cup chicken broth or vegetable broth for a vegetarian twist
Vegetables & Herbs
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh
  • fresh basil, for garnish optional, but highly encouraged for that Instagram-worthy presentation
Cheese & Seasoning
  • 1 cup Parmesan cheese, grated because cheese is life!
  • Salt and pepper to taste

Method
 

Cook Linguine
  1. In a large pot of boiling salted water, cook the linguine according to package instructions until al dente.
Sauté the Shrimp
  1. While the pasta is cooking, heat olive oil in a large skillet over medium-high heat.
  2. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes per side until the shrimp is pink and opaque.
  3. Remove from the skillet and set aside.
Create the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Then, pour in the heavy cream and chicken broth, stirring to combine.
Add in the Goodies
  1. Stir in the sun-dried tomatoes, cooked shrimp, fresh spinach, and let everything simmer for about 2-3 minutes.
Combine and Finish
  1. Toss the cooked linguine into the skillet with the sauce.
  2. Add the grated Parmesan cheese and mix until everything is smoothly coated.
Serve It Up
  1. Garnish with fresh basil if you’re feeling fancy, and get ready to dig in!

Notes

Don’t skimp on the cheese; more cheese = more happiness! You can add veggies like bell peppers or zucchini for extra nutrition. If your sauce looks a little lumpy, just give it a good stir, and you’re good to go.
