  • 2 tablespoons olive oil
  • 4-5 cloves garlic, minced Garlic makes everything better!
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes For a spicy kick!
  • 1 cup vegetable broth
  • 1 cup heavy cream (or a plant-based alternative) For a lighter twist
  • Salt and pepper, to taste
  • Fresh herbs for garnish (like parsley or basil)

Cooking Steps
  1. Start by bringing a large pot of salted water to a boil. Toss in the gnocchi and cook according to package instructions until they float to the top—this usually takes about 2-3 minutes. Once done, drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once it’s shimmering, throw in minced garlic, oregano, thyme, and red pepper flakes. Sauté for about 1-2 minutes.
  3. Stir in the white beans and vegetable broth to the skillet. Let it simmer for about 5 minutes.
  4. Pour in the heavy cream and season with salt and pepper. Let it cook for another 3-4 minutes until it thickens slightly.
  5. Gently mix in the cooked gnocchi for an extra minute to soak in the sauce.
  6. Scoop into bowls, sprinkle with fresh herbs, and serve.

Notes

Feel free to swap white beans for chickpeas or lentils. Add more vegetable broth or cream for sauce consistency. Extra veggies like spinach or kale can enhance flavor and nutrition.
