Preparation
  1. Start by boiling your eggs. Place them in a saucepan and cover with cold water. Bring the water to a boil over medium heat, then cover and remove from heat. Let them sit for about 12-15 minutes.
  2. Transfer the boiled eggs to a bowl of ice water to stop the cooking process.
  3. Once cooled, peel the eggs gently to avoid breaking. Cut each egg in half lengthwise and scoop out the yolks into a mixing bowl.
Make the Filling
  1. Add mayonnaise, Dijon mustard, salt, and pepper to the yolks. Mash everything together until smooth.
  2. For a creepy effect, add a few drops of food coloring to the yolk mixture.
Fill the Egg Whites
  1. Using a spoon or piping bag, fill the egg whites with the yolk mixture.
Add the Eyeballs
  1. Slice the black olives in half and place one half on top of each filled egg to mimic creepy eyeballs.
  2. Optionally, add a bit of chive on the side for extra flair.
Chill and Serve
  1. Place the eggs in the fridge for about 30 minutes to let them chill and the flavors to mingle.
