Ingredients
  

For the Crepes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
For the Cream Cheese Filling
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced

Method
 

Preparation
  1. In a large mixing bowl, combine the flour, eggs, milk, melted butter, sugar, vanilla extract, and a pinch of salt. Whisk until smooth.
  2. Cover your batter and let it rest in the fridge for about 30 minutes.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  2. Pour about 1/4 cup of the crepe batter into the skillet while swirling to spread evenly. Cook for about 1-2 minutes until the edges start to lift, then flip and cook another 1-2 minutes until golden brown.
  3. Transfer the crepes to a plate and continue with the remaining batter.
Filling
  1. In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread a scoop of the cream cheese filling into each crepe, add fresh strawberries, then fold or roll up.
Serving
  1. Dust with powdered sugar and drizzle with honey or chocolate sauce if desired.

Notes

You can prepare the batter a day in advance and store in the fridge. Feel free to experiment with different fruit fillings.
