  • 2 medium beetroots, cooked and diced

  • 1 tablespoon lemon juice add more if you like it zesty
  • salt and pepper to taste
  • Feta cheese (optional) for added flavor

Preparation
  1. Start by slicing the cucumbers and dicing the beetroots. If you’re using pre-cooked beets, you can skip the skinning and chopping part.
  2. In a large bowl, combine the sliced cucumbers, diced beetroots, and red onion. Toss them gently.
  3. In a separate bowl, whisk together the olive oil, lemon juice, and a generous pinch of salt and pepper.
  4. Pour the dressing over your veggie mix and toss until everything is coated.
  5. Top with chopped parsley and sprinkle feta cheese on top if desired.

Notes

This salad tastes even better when chilled for about 30 minutes before serving. Feel free to customize ingredients as per your taste.
