- Start by slicing the cucumbers and dicing the beetroots. If you’re using pre-cooked beets, you can skip the skinning and chopping part.
- In a large bowl, combine the sliced cucumbers, diced beetroots, and red onion. Toss them gently.
- In a separate bowl, whisk together the olive oil, lemon juice, and a generous pinch of salt and pepper.
- Pour the dressing over your veggie mix and toss until everything is coated.
- Top with chopped parsley and sprinkle feta cheese on top if desired.
