  • 2 medium cucumbers
  • 2 medium beetroots, cooked and peeled
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • to taste salt and pepper
  • Feta cheese for topping Optional

Method
 

Preparation
  1. Rinse the cucumbers and beetroots. Slice the cucumbers into thin rounds and chop the beetroots into bite-sized pieces. Use gloves to avoid staining your hands if preferred.
Mixing
  1. In a large bowl, combine the cucumbers, beetroots, and red onion.
Dressing
  1. In a separate small bowl, whisk together the olive oil, lemon juice, chopped parsley, and mint. Season with salt and pepper to taste.
Combining
  1. Pour the herb dressing over the veggie mixture and toss gently to combine.
Serving
  1. Sprinkle crumbled feta cheese on top if desired, then serve immediately.

Notes

This salad can be prepped a few hours ahead of time. Customize by adding or omitting ingredients as you prefer. If using fresh beetroots, cover your work area to catch juices.
