Ingredients
  

For the Bang Bang Shrimp
  • 1 pound shrimp, peeled and deveined fresh or frozen works
  • 1 cup buttermilk or milk + a splash of vinegar
  • 1 cup all-purpose flour for crispy crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying vegetable or canola is ideal
For the Zesty Sauce
  • 1 cup mayonnaise the creamy foundation
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha or more if you want it spicy
  • 1 teaspoon lime juice
  • A sprinkle of onion powder for zing
For Serving
  • 4 cups cooked rice jasmine or brown rice are great choices
  • Fresh cilantro or green onions for garnish
  • Lime wedges for serving

Method
 

Preparation
  1. Soak your shrimp in buttermilk for about 15-20 minutes.
  2. In a separate bowl, whisk together the flour, garlic powder, paprika, salt, and pepper.
  3. Heat about an inch of oil in a large pan over medium-high heat.
Cooking
  1. Coat shrimp with the seasoned flour mixture after letting excess buttermilk drip off.
  2. Fry shrimp in batches for about 2-3 minutes on each side until golden brown and crispy.
  3. While the shrimp are frying, mix mayonnaise, sweet chili sauce, sriracha, lime juice, and onion powder in a bowl.
Assembly
  1. Layer cooked rice in bowls, top with crispy shrimp, drizzle with zesty sauce, garnish with cilantro or green onions, and serve with lime wedges.

Notes

Use frozen pre-cooked shrimp for a quicker meal. Adjust spice levels in the sauce as desired. Don't worry about a lumpy sauce, just stir until it's well mixed.
