  • 1 pound Brussels sprouts, halved
  • 6 slices bacon, chopped
  • 1 cup pecans, roughly chopped
  • 1 cup dried cranberries
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 teaspoon maple syrup (optional) Highly recommended for a sweet touch!

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the Brussels sprouts and cut them in half.
Cooking
  1. On a large, rimmed baking sheet, spread the chopped bacon. Roast for about 10 minutes or until crispy.
  2. While the bacon cooks, toss in the halved Brussels sprouts, pecans, cranberries, olive oil, and season with salt and pepper. Drizzle with maple syrup if using.
  3. Spread the mixture evenly on the baking sheet and bake for an additional 15-20 minutes, stirring halfway through.
  4. Once crispy, remove from the oven and let sit for a couple of minutes before serving.

Notes

You can drizzle some of the rendered bacon fat over the sprouts before roasting for enhanced flavor. Customize with additional seasonings like garlic powder or red pepper flakes for a twist!
