- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and drizzle them with olive oil. Sprinkle with a pinch of salt and pepper.
- Bake the baguette slices for about 8-10 minutes or until golden and crispy.
- In a baking dish, combine cranberries, brown sugar, balsamic vinegar, and rosemary. Toss together well.
- Roast cranberries in the oven for about 15-20 minutes, or until they burst and become glossy.
- Once crostini are cool, spread a generous layer of creamy brie on each piece.
- Top with balsamic roasted cranberries and garnish with fresh thyme if desired.
Notes
You can roast the cranberries a day in advance. Store crostini without toppings in an airtight container. For a gluten-free option, use gluten-free baguettes.
