Ingredients
  

For the Crostini
  • 1 baguette 1 baguette, sliced into ½-inch pieces
  • 1/4 cup 1/4 cup olive oil
  • Pinch Pinch of salt and pepper
For the Balsamic Roasted Cranberries
  • 2 cups 2 cups fresh cranberries
  • 1/4 cup 1/4 cup brown sugar
  • 1/4 cup 1/4 cup balsamic vinegar
  • 1 teaspoon 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
For the Topping
  • 8 ounces 8 ounces creamy brie cheese
  • to taste Fresh thyme leaves for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and drizzle them with olive oil. Sprinkle with a pinch of salt and pepper.
  3. Bake the baguette slices for about 8-10 minutes or until golden and crispy.
  4. In a baking dish, combine cranberries, brown sugar, balsamic vinegar, and rosemary. Toss together well.
  5. Roast cranberries in the oven for about 15-20 minutes, or until they burst and become glossy.
  6. Once crostini are cool, spread a generous layer of creamy brie on each piece.
  7. Top with balsamic roasted cranberries and garnish with fresh thyme if desired.

Notes

You can roast the cranberries a day in advance. Store crostini without toppings in an airtight container. For a gluten-free option, use gluten-free baguettes.
