Method
Marinating the Chicken
- Marinate the chicken thighs in buttermilk for at least 1 hour or overnight if desired.
Preparing the Chicken Coating
- In a bowl, mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
Cooking the Chicken
- Heat about 1 inch of oil in a large skillet to around 350°F.
- Remove the chicken from buttermilk, dredge it in the seasoned flour mixture until fully coated.
- Carefully place the chicken in hot oil, cooking for 5-7 minutes per side until golden brown and crispy.
- Drain on paper towels and sprinkle with salt immediately.
Making the Glaze
- In a small saucepan, combine honey, chopped jalapeno, apple cider vinegar, and a pinch of salt. Heat over low to infuse the flavors.
Assembling the Sandwich
- Toast brioche buns lightly and layer each with lettuce, tomato, and the fried chicken.
- Drizzle with jalapeno honey glaze and add pickles if desired.
Notes
For best results, avoid soggy buns by using just a drizzle of the glaze. You can also substitute jalapenos with crushed red pepper if you prefer less heat. Serve with sweet potato fries for a meal.
