Ingredients
  

For the Fried Chicken
  • 2 pieces boneless, skinless chicken thighs Alternatively, use chicken breasts if preferred.
  • 1 cup buttermilk Can substitute with regular milk and a splash of vinegar.
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • Oil for frying Use your favorite cooking oil.
For the Jalapeno Honey Glaze
  • 1/2 cup honey
  • 1 whole jalapeno, finely chopped Adjust quantity to your spice level.
  • 1 tablespoon apple cider vinegar
  • to taste Salt
For Assembling
  • 2 pieces brioche buns Use fresh for best results.
  • Lettuce, tomato, and pickles As desired.

Method
 

Marinating the Chicken
  1. Marinate the chicken thighs in buttermilk for at least 1 hour or overnight if desired.
Preparing the Chicken Coating
  1. In a bowl, mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
Cooking the Chicken
  1. Heat about 1 inch of oil in a large skillet to around 350°F.
  2. Remove the chicken from buttermilk, dredge it in the seasoned flour mixture until fully coated.
  3. Carefully place the chicken in hot oil, cooking for 5-7 minutes per side until golden brown and crispy.
  4. Drain on paper towels and sprinkle with salt immediately.
Making the Glaze
  1. In a small saucepan, combine honey, chopped jalapeno, apple cider vinegar, and a pinch of salt. Heat over low to infuse the flavors.
Assembling the Sandwich
  1. Toast brioche buns lightly and layer each with lettuce, tomato, and the fried chicken.
  2. Drizzle with jalapeno honey glaze and add pickles if desired.

Notes

For best results, avoid soggy buns by using just a drizzle of the glaze. You can also substitute jalapenos with crushed red pepper if you prefer less heat. Serve with sweet potato fries for a meal.
