Crispy Fried Chicken Wings and Cheesy Lasagna

Ingredients
  

For the Crispy Fried Chicken Wings
  • 2 lbs chicken wings
  • 2 cups buttermilk (for soaking) Soak for at least 30 minutes or up to 1 hour.
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Oil for frying Heat to around 375°F (190°C).
For the Cheesy Lasagna
  • 9 pieces lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce Use homemade for more flavor.
  • 1 piece egg
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Soak the chicken wings in buttermilk for at least 30 minutes to 1 hour.
  2. While wings soak, heat oil in a deep fryer or large pot to around 375°F (190°C). Mix flour, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
  3. After soaking, dredge wings in the seasoned flour mixture.
Frying the Wings
  1. Fry the wings in batches for 8-10 minutes until golden brown and crispy. Place on a wire rack to drain excess oil.
Cooking the Lasagna
  1. Cook the lasagna noodles according to package instructions. Optionally, spread olive oil over them after draining.
  2. Mix ricotta cheese, egg, Italian seasoning, salt, and pepper in a bowl for the filling.
Assembling and Baking
  1. In a 9x13 baking dish, spread a layer of marinara sauce. Add three lasagna noodles, half of the ricotta filling, a third of the mozzarella, and another layer of sauce. Repeat until final layer with noodles, remaining sauce, mozzarella, and Parmesan.
  2. Preheat oven to 375°F (190°C) and bake lasagna for 30-35 minutes until cheese is melty and bubbly.
Serving
  1. Serve crispy fried chicken wings alongside the cheesy lasagna.

Notes

For extra crispy wings, double-dredge by dipping them back in buttermilk and flour before frying. You can assemble the lasagna a day ahead and store it in the fridge. Reheat leftovers in the microwave or oven.
