Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup breadcrumbs (panko for extra crunch!)
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
For the Tangy Slaw
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • ¼ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
For Assembly
  • 4 pieces sandwich buns (your choice!)
  • Olive oil or cooking spray for frying

Preparation
  1. Start by seasoning your chicken breasts with salt and pepper.
Breading
  1. Dredge each chicken breast in flour, dip it in the egg, and coat it with breadcrumbs.
  2. For that crunch-tastic exterior, don’t be shy with the breadcrumbs!
Cooking
  1. Heat up some olive oil in a large skillet over medium heat.
  2. Alternatively, bake them in the oven at 400°F for about 20 minutes for a healthier option.
Cheese Melting
  1. Once your chicken is crispy and cooked through, place a generous amount of mozzarella cheese on top of each breast.
  2. Cover the skillet for a minute to let that gooey goodness melt.
Slaw Preparation
  1. In a large bowl, combine cabbage, carrots, mayo, vinegar, honey, salt, and pepper.
  2. Toss until everything is evenly coated.
Assembly
  1. Grab those sandwich buns and layer a piece of the cheesy chicken on the bottom.
  2. Top with a generous heap of tangy slaw and pop that bun on top.

Notes

Don’t skimp on the slaw! Load it up for maximum flavor. Cook your chicken ahead of time to easily reheat. Add avocado or sliced jalapeños for an extra zing if desired.
