  • 2 medium zucchinis Choose smaller, firmer zucchinis for a better taste.
  • 1 cup breadcrumbs Panko breadcrumbs provide extra crunch.
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs Use for the egg wash.
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning Adds herbaceous flavor.
  • to taste Salt and pepper Adjust seasoning according to preference.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchinis and slice them into long, thin strips, aiming for about a quarter-inch thick.
  3. Pat the zucchini strips dry with a towel to avoid sogginess.
Breading
  1. In one bowl, whisk the eggs.
  2. In a separate bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Dip each zucchini strip into the egg wash first then roll it in the breadcrumb mixture until well-coated.
  4. Place the coated strips on a baking sheet lined with parchment paper, ensuring they are spaced out.
Cooking
  1. Spritz the coated zucchini fries with olive oil.
  2. Bake in the oven for about 20-25 minutes, flipping halfway through.
Serving
  1. Once golden brown and crispy, remove from the oven, let cool slightly, and serve with your favorite dipping sauces.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
