Ingredients
  

For the Bites
  • 1 pound large shrimp, peeled and deveined
  • 1 cup mushrooms, finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)
For the Spicy Ranch Dip
  • 1 cup ranch dressing
  • 1 tablespoon hot sauce Adjust to your spice level
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Chopped fresh herbs for garnish (optional)

Method
 

Preparation
  1. In a large bowl, combine the chopped shrimp and mushrooms. Add garlic powder, paprika, salt, and pepper, mixing until well-blended.
  2. Set up a dredging station with three bowls: one for flour, one for the beaten egg, and another for breadcrumbs.
  3. Take a small scoop of the shrimp mixture, form it into a bite-sized ball, then roll it first in flour, dip it in the egg, and finally coat it with breadcrumbs.
  4. Repeat with the remaining mixture.
Cooking
  1. Heat about 1-2 inches of oil in a heavy skillet over medium heat.
  2. Once hot, carefully place a few bites into the oil, being sure not to overcrowd the pan.
  3. Fry until golden brown on all sides, about 3-4 minutes. Remove them and let them drain on a paper towel.
Making the Dip
  1. In a small bowl, combine the ranch dressing, hot sauce, garlic powder, and onion powder. Mix well.
  2. Taste and adjust the spice level to your preference.
Serving
  1. Once the shrimp and mushroom bites are cool enough to handle, plate them up, serve with the spicy ranch dip.

Notes

If you have leftover shrimp and mushroom mix, store it in the fridge for a day or two. Coat the bites right before frying for best results. To add more spice to the ranch dip, mix in diced jalapeƱos or cayenne pepper.
