  • 1 lb ground beef (or any ground meat of your choice) Can substitute with turkey or plant-based meat.
  • 6 medium potatoes, diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup milk (or a dairy-free substitute)
  • 1 cup heavy cream (or coconut cream for a lighter option)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat. Drain excess fat and set aside.
  2. Chop the potatoes and onion.
Cooking
  1. Combine the browned meat, diced potatoes, and onion into the slow cooker.
  2. Add the chicken broth, garlic powder, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in the milk and heavy cream.
  5. For a thicker consistency, mash a few potatoes with a fork.
  6. Ladle soup into bowls and top with expected toppings.

Notes

You can prep vegetables the night before and store them in a zip-top bag. Feel free to add greens like spinach or kale during the last 10 minutes of cooking for extra nutrition.
