  • 0.5 cup brown sugar optional to use less depending on sweetness preference
  • 0.33 cup butter, melted can substitute with coconut oil for a vegan option
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 2 cups mini marshmallows for topping

Preparation
  1. Peel and dice the sweet potatoes into small chunks for quicker cooking.
  2. In a medium bowl, combine melted butter, brown sugar, cinnamon, and salt. Whisk until well combined.
Crockpot Cooking
  1. Layer the diced sweet potatoes in the slow cooker and pour the brown sugar mixture over them, ensuring each piece gets coated.
  2. Cover and cook on low for about 4 to 6 hours, or on high for 2 to 3 hours.
  3. About 30 minutes before serving, sprinkle mini marshmallows on top and cover again to let them melt.

Notes

This dish can be prepped a day in advance and stored in the fridge overnight. Line the crockpot for easier cleanup.
