Preparation
- Peel and dice the sweet potatoes into small chunks for quicker cooking.
- In a medium bowl, combine melted butter, brown sugar, cinnamon, and salt. Whisk until well combined.
Crockpot Cooking
- Layer the diced sweet potatoes in the slow cooker and pour the brown sugar mixture over them, ensuring each piece gets coated.
- Cover and cook on low for about 4 to 6 hours, or on high for 2 to 3 hours.
- About 30 minutes before serving, sprinkle mini marshmallows on top and cover again to let them melt.
Notes
This dish can be prepped a day in advance and stored in the fridge overnight. Line the crockpot for easier cleanup.
