Ingredients
  

For the Crostini
  • 1 baguette 1 baguette, sliced into 1/2-inch pieces Can substitute with sourdough, ciabatta, or whole-grain bread.
  • 2 cups 2 cups fresh cranberries
  • 1/2 cup 1/2 cup balsamic vinegar
  • 1/4 cup 1/4 cup brown sugar
  • 8 ounces 8 ounces creamy brie cheese, sliced Can substitute with goat cheese or cream cheese.
  • 2 tablespoons 2 tablespoons olive oil
  • to taste pinch Salt and pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C).
  2. In a baking dish, combine the fresh cranberries, balsamic vinegar, and brown sugar. Toss them to coat well, then spread them into a single layer. Roast in the oven for about 20 minutes, giving them a little stir halfway through.
  3. While the cranberries are roasting, arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil and sprinkle with salt and pepper. Bake for about 5-6 minutes, flipping halfway through, until they are golden brown and crunchy.
  4. Once the baguette slices are ready, remove them from the oven. Top each slice with a piece of brie and a spoonful of balsamic-roasted cranberries.
  5. Pop the assembled crostini back in the oven for just a minute or two to warm the brie slightly—be careful not to let it melt completely.
  6. Serve the crostini, and optionally drizzle with extra balsamic reduction for flair.

Notes

You can prepare the roasted cranberries a day in advance and store them in the fridge. Leftover crostini are best enjoyed fresh, but the cranberry mixture can be stored for a couple of days.
