Preparation
- Preheat your oven to 400°F (204°C).
- In a baking dish, combine the fresh cranberries, balsamic vinegar, and brown sugar. Toss them to coat well, then spread them into a single layer. Roast in the oven for about 20 minutes, giving them a little stir halfway through.
- While the cranberries are roasting, arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil and sprinkle with salt and pepper. Bake for about 5-6 minutes, flipping halfway through, until they are golden brown and crunchy.
- Once the baguette slices are ready, remove them from the oven. Top each slice with a piece of brie and a spoonful of balsamic-roasted cranberries.
- Pop the assembled crostini back in the oven for just a minute or two to warm the brie slightly—be careful not to let it melt completely.
- Serve the crostini, and optionally drizzle with extra balsamic reduction for flair.
Notes
You can prepare the roasted cranberries a day in advance and store them in the fridge. Leftover crostini are best enjoyed fresh, but the cranberry mixture can be stored for a couple of days.
