Preparation
- In a bowl, stir together cooked rice noodles, shredded carrots, bean sprouts, and cabbage. Add in soy sauce and sesame oil.
- If you love fresh herbs, feel free to toss in some mint or cilantro.
Soaking and Rolling
- Fill a shallow dish with warm water. One by one, dip your rice paper wrappers in the warm water for 10-15 seconds until pliable.
- Place the soaked rice paper on a clean surface. Add a spoonful of the filling mixture in the middle, fold the sides inward, and roll tightly from the bottom up.
Air Frying
- Once you've rolled all your noodle rolls, lightly spray them with cooking spray.
- Arrange the rolls in the air fryer basket in a single layer.
- Preheat your air fryer to 375°F (190°C) and cook the rolls for 8-10 minutes until golden brown and crispy. Flip them halfway through.
Serving
- Carefully remove from the air fryer and serve with your favorite dipping sauce, such as peanut sauce or hoisin sauce.
Notes
If rice paper wrappers tear, keep rolling; it adds character! Customize the filling with leftovers or protein as desired. Store leftovers in an airtight container for up to 3 days.
