For the salad
  • 2 cups cooked chicken breast, shredded You can use leftover chicken for convenience.
  • 4 cups mixed greens (like spinach, romaine, or kale)
  • 1 cup napa cabbage, shredded
  • 1 medium red bell pepper, sliced
  • ½ cup carrots, shredded
  • ½ cup snap peas, halved
  • ¼ cup green onions, sliced For garnish.
  • ¼ cup slivered almonds or sesame seeds For extra crunch.
For the dressing
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • to taste red pepper flakes Optional for spiciness.

Method
 

Preparation
  1. In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, ginger, and garlic. Adjust to taste.
Assembly
  1. In a large bowl, combine mixed greens, napa cabbage, chicken, bell pepper, carrots, and snap peas. Toss together.
  2. Drizzle the dressing over the salad and toss again to coat evenly.
  3. Garnish with green onions and your choice of slivered almonds or sesame seeds.
