Ingredients
  

For the salad
  • 2 cups cooked chicken, shredded or diced Grab a rotisserie chicken for speed!
  • 4 cups mixed salad greens (like romaine, spinach, and purple cabbage)
  • 1 cup shredded carrots
  • 1 cup bell peppers, chopped (red or yellow for some pizzazz!)
  • 1/2 cup green onions, sliced
  • 1/2 cup crunchy chow mein noodles
  • 1/4 cup toasted sesame seeds
For the dressing
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey (or maple syrup for a vegan twist)
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • optional: a sprinkle of red pepper flakes for a bit of heat!

Method
 

Preparation
  1. Start by washing your salad greens and tossing them in a big bowl.
  2. Next, add your shredded carrots, chopped bell peppers, and sliced green onions.
Making the Dressing
  1. In a small bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, ginger, garlic, and red pepper flakes if you fancy a little kick.
  2. Taste it—go on, it’s just for you!
Combining
  1. Add your cooked chicken to the salad bowl and give everything a gentle toss.
Dressing the Salad
  1. Drizzle the dressing over the salad and mix until everything is beautifully coated.
Serving
  1. Just before serving, sprinkle the chow mein noodles and toasted sesame seeds on top for that satisfying crunch!

Notes

If you’re crunched for time, don’t shy away from using a rotisserie chicken or pre-cooked chicken strips. Feel free to toss in any veggies you have on hand, like cucumbers or snap peas. Any extra dressing can be stored in the fridge for up to a week.
