  • 4 slices slices of bread (your favorite kind; sourdough works wonders)
  • 1 cup fresh spinach (roughly chopped)
  • 1/2 cup feta cheese (crumbled)
  • 2 tablespoons butter (softened for easy spreading)
  • Salt and pepper to taste
  • Optional: Red pepper flakes for some heat

Method
 

Preparation
  1. Wash and roughly chop the fresh spinach, squeezing out any excess moisture.
  2. In a bowl, combine the chopped spinach and crumbled feta cheese. Sprinkle in some salt and pepper to taste. If feeling spicy, toss in red pepper flakes.
Assembly
  1. Spread a layer of softened butter on one side of each slice of bread.
  2. Place two slices of bread butter-side down on a skillet, and add the spinach and feta mixture on top. Then, place the remaining two slices of bread on top, butter-side up.
Cooking
  1. Heat the skillet over medium heat, cooking the sandwiches for about 3-4 minutes on each side until golden brown and cheese is melted.
Serving
  1. Slice the grilled cheese into triangles and serve hot, optionally with a side of tomato soup.

Notes
