Preparing the Cake
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
- Mix it Up: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 3-5 minutes).
- Add the Wet Ingredients: Mix in the eggs one at a time, followed by the cooled coffee, caramel sauce, and vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients until fully combined.
- Bake It Up: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pans for about 10 minutes before transferring them to a wire rack.
Whipping Up Coffee Buttercream
- Mix Butter and Sugar: In a medium bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing until combined.
- Add Coffee & Flavor: Add the brewed coffee, vanilla extract, and a pinch of salt. Mix until the frosting is light and fluffy.
Assemble Your Cake
- Layer and Frost: Place one cake layer on a serving plate or stand. Spread a generous amount of coffee buttercream on top, then place the second layer on top and frost the top and sides of the cake.
- Finish with Caramel Sauce: Drizzle additional caramel sauce over the top as a finishing touch.
- Slice and Serve: Cut a beautiful slice, brew a fresh coffee, and enjoy your decadent creation.
Notes
Don’t Overbake: Keep an eye on your cakes to avoid dryness. You can bake the cakes a day ahead and chill them to make frosting easier. Swap out the coffee for cocoa powder for a chocolate version.
