Ingredients
  

For the Shrimp Filling
  • 1 pound shrimp, peeled and deveined
  • 1 cup Alfredo sauce Store-bought for speed, homemade for flair.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt & pepper
For the Burrito Bites
  • 4 large tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • for frying amount Vegetable oil

Method
 

Preparation
  1. In a skillet over medium heat, add a splash of oil and toss in the shrimp, garlic powder, paprika, salt, and pepper. Cook for about 2-3 minutes until they’re pink and fully cooked. Once done, chop them into bite-sized pieces and mix in the Alfredo sauce. Set aside.
Assembly
  1. Lay a tortilla flat on a clean surface. Spoon about 2-3 tablespoons of shrimp filling onto the center, then sprinkle with mozzarella cheese. Fold the edges of the tortilla in and roll it up like a burrito.
Coating
  1. In one bowl, place the beaten eggs, and in another, pour in your breadcrumbs. Dip each burrito in the egg, letting the excess drip off, then roll it in the breadcrumbs.
Frying
  1. Heat up about 2 inches of vegetable oil in a deep pan over medium heat. Once hot enough (you can test with a breadcrumb—if it sizzles, you're good!), carefully place a few burrito bites in. Fry until golden brown, around 3-4 minutes per side. Remove and let drain on a paper towel.
Serving
  1. Serve the Deep-Fried Shrimp Alfredo Burrito Bites hot with your favorite dipping sauce like ranch, marinara, or a spicy aioli.

Notes

Don’t overcrowd the pan to ensure crispy bites. Leftover filling can be used as a pasta sauce, and if the sauce looks lumpy, just stir and continue.
