Cooking Steps
- In a large pan or skillet, heat the vegetable oil over medium heat. Toss in the garlic, ginger, and onion, and sauté until fragrant and the onions are translucent.
- Add in your chicken pieces and brown them for about 5 minutes. They don’t have to be fully cooked at this stage.
- Stir in the sliced red bell pepper, cooking for another 2-3 minutes.
- Pour in the coconut milk, and add the red curry paste, fish sauce, and brown sugar. Stir until everything is well combined.
- Bring the mixture to a gentle simmer. Reduce the heat and let it bubble for about 10-15 minutes until the chicken is cooked through and the sauce is thick.
- Stir in the chopped basil and season with salt and pepper to taste.
- Serve the delicious basil chicken over a bed of rice or quinoa.
Notes
Don’t worry if your sauce looks a little lumpy at first, just let it simmer. Feel free to add your favorite vegetables like spinach or carrots for extra color and flavor.
