  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste Adjust based on your spice tolerance
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian twist)
  • 1 tablespoon brown sugar
  • 1 cup fresh basil leaves, chopped Adoringly fresh!
  • Salt and pepper, to taste
  • Optional: Cooked rice or quinoa for serving

Cooking Steps
  1. In a large pan or skillet, heat the vegetable oil over medium heat. Toss in the garlic, ginger, and onion, and sauté until fragrant and the onions are translucent.
  2. Add in your chicken pieces and brown them for about 5 minutes. They don’t have to be fully cooked at this stage.
  3. Stir in the sliced red bell pepper, cooking for another 2-3 minutes.
  4. Pour in the coconut milk, and add the red curry paste, fish sauce, and brown sugar. Stir until everything is well combined.
  5. Bring the mixture to a gentle simmer. Reduce the heat and let it bubble for about 10-15 minutes until the chicken is cooked through and the sauce is thick.
  6. Stir in the chopped basil and season with salt and pepper to taste.
  7. Serve the delicious basil chicken over a bed of rice or quinoa.

Notes

Don’t worry if your sauce looks a little lumpy at first, just let it simmer. Feel free to add your favorite vegetables like spinach or carrots for extra color and flavor.
