Ingredients

For the Cake
  • 1.75 cups all-purpose flour
  • 0.75 cups cocoa powder
  • 2 cups sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk Use full-fat milk for best flavor.
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This will make the batter runny but is normal.
For the Strawberry Filling
  • 2 cups fresh strawberries, sliced
  • 0.5 cups sugar Adjust according to sweetness preference.
For the Frosting
  • 1.5 cups unsalted butter, softened
  • 3-4 cups powdered sugar Adjust to taste.
  • 0.5 cups cocoa powder
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk To achieve desired consistency.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  3. Add in the eggs, milk, oil, and vanilla. Mix until smooth, then gradually stir in the boiling water.
Baking
  1. Divide the batter evenly between the prepared pans and bake for about 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
Strawberry Filling
  1. While the cake cools, toss your sliced strawberries in a bowl with sugar and let them sit to bring out their juices.
Frosting
  1. Cream the softened butter until light and fluffy. Gradually add powdered sugar and cocoa powder, then pour in vanilla and add milk one tablespoon at a time until you achieve a fluffy frosting consistency.
Assembly
  1. Once cooled, remove the cakes from the pans. Place one layer on a serving plate, add the strawberry filling, and then gently place the second layer on top. Frost the top and sides with chocolate frosting.

Notes

Let the cakes cool completely before adding frosting to avoid a melty mess. You can also experiment with flavors by adding orange zest to the frosting.
