  • 4 cups fresh broccoli florets, chopped into bite-sized pieces Rinse before chopping.
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded carrots
  • 1/2 cup red onion, finely chopped
Dressing
  • 3/4 cup Greek yogurt You can substitute with sour cream or vegan yogurt.
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup Honey can be replaced with maple syrup for a vegan option.
Toppings
  • 1/2 cup sunflower seeds Adds crunch and nutrition.
  • to taste Salt and pepper Adjust according to preference.

Preparation
  1. Rinse the broccoli florets and chop them into small, munchable pieces.
  2. In a large mixing bowl, combine the broccoli, cherry tomatoes, shredded carrots, red onion, and sunflower seeds. Toss to mix well.
  3. In a separate smaller bowl, whisk together the Greek yogurt, apple cider vinegar, and honey until smooth.
  4. Pour the dressing over the veggies and toss gently. Season with salt and pepper.
  5. Let it sit in the fridge for about 30 minutes to let the flavors mingle, or serve immediately if you're in a hurry.

Notes

Feel free to add other veggies like bell peppers or diced avocado. Store leftovers in an airtight container in the fridge for up to 3 days; the broccoli may lose its crunch over time, but it will still taste great.
