- Rinse the broccoli florets and chop them into small, munchable pieces.
- In a large mixing bowl, combine the broccoli, cherry tomatoes, shredded carrots, red onion, and sunflower seeds. Toss to mix well.
- In a separate smaller bowl, whisk together the Greek yogurt, apple cider vinegar, and honey until smooth.
- Pour the dressing over the veggies and toss gently. Season with salt and pepper.
- Let it sit in the fridge for about 30 minutes to let the flavors mingle, or serve immediately if you're in a hurry.
Notes
Feel free to add other veggies like bell peppers or diced avocado. Store leftovers in an airtight container in the fridge for up to 3 days; the broccoli may lose its crunch over time, but it will still taste great.
