Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix together the vegetable oil, buttermilk, eggs, blue food coloring, vanilla extract, and vinegar.
- Pour the wet ingredients into the dry mixture, and mix until just combined; divide the batter evenly between the prepared cake pans.
Baking
- Bake the cakes in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
Frosting and Serving
- In a large bowl, beat the softened butter and cream cheese until creamy, then gradually add powdered sugar and mix until smooth.
- Add the vanilla and salt, and mix thoroughly.
- Once the cake layers are completely cool, place one layer on a serving platter and generously spread the cream cheese frosting on top.
- Place the second layer on top and frost the top and sides of the cake.
- Slice the cake and enjoy every bite!
Notes
Use room-temperature eggs and buttermilk for better emulsification. For decoration, consider adding blue sprinkles or fresh berries on top.
