Ingredients
  

For the Cake
  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¼ cups vegetable oil
  • 1 cup buttermilk, room temperature Can substitute with milk mixed with vinegar or lemon juice.
  • 3 large eggs, room temperature
  • 2 tablespoons blue food coloring Use gel for a richer hue.
  • 1 teaspoon vanilla extract
  • 1 tablespoon white vinegar
For the Cream Cheese Frosting
  • 1 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the vegetable oil, buttermilk, eggs, blue food coloring, vanilla extract, and vinegar.
  4. Pour the wet ingredients into the dry mixture, and mix until just combined; divide the batter evenly between the prepared cake pans.
Baking
  1. Bake the cakes in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
Frosting and Serving
  1. In a large bowl, beat the softened butter and cream cheese until creamy, then gradually add powdered sugar and mix until smooth.
  2. Add the vanilla and salt, and mix thoroughly.
  3. Once the cake layers are completely cool, place one layer on a serving platter and generously spread the cream cheese frosting on top.
  4. Place the second layer on top and frost the top and sides of the cake.
  5. Slice the cake and enjoy every bite!

Notes

Use room-temperature eggs and buttermilk for better emulsification. For decoration, consider adding blue sprinkles or fresh berries on top.
