Ingredients
  

For the salad base
  • 1 pound ground beef or turkey for a lighter option
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or canned
  • 2 cups chopped lettuce romaine or iceberg work well
  • 1 cup chopped tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup salsa store-bought or homemade
  • 1 cup Doritos nacho cheese flavor recommended
Optional toppings
  • to taste sour cream for topping
  • to taste avocado slices for that extra flair

Method
 

Preparation
  1. In a large skillet over medium heat, brown the ground beef (or turkey) until cooked through, about 5-7 minutes. Drain any excess fat. Stir in the taco seasoning and water as per package instructions. Let it simmer for a few minutes until the flavors meld together.
  2. In a large salad bowl, combine the chopped lettuce, rinsed black beans, corn, chopped tomatoes, and shredded cheese.
  3. Add the cooked meat to the salad mixture and give it a gentle toss.
  4. Add the Doritos right before serving to maintain their delightful crunch. Toss them in just enough to coat everything without crushing them too much.
  5. Serve with salsa drizzled on top, and add a dollop of sour cream and a couple of avocado slices if you’re feeling fancy.

Notes

Customize the spice level by adjusting the salsa. Store leftovers separately to keep the Doritos crunchy for up to 2 days.
