Ingredients
  

For the Cake
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
For the Filling
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
For the Topping
  • Powdered sugar, for dusting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line a 15 x 10 inch jelly roll pan with parchment paper, and spray it lightly with cooking oil.
  3. In a large mixing bowl, beat the eggs and sugar until they triple in volume.
  4. Gently fold in the flour, baking powder, and salt until just combined.
Baking
  1. Pour the batter into the prepared pan and spread it evenly.
  2. Bake for about 12-15 minutes, or until it springs back when lightly pressed.
  3. Let it cool for a few minutes, then dust a clean kitchen towel with powdered sugar.
  4. Carefully turn the cake onto the towel and roll it up from one short side to the other.
Filling
  1. While the cake cools, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Unroll the cooled cake, spread the whipped cream filling over the top, and roll it back up without the towel.
  3. Wrap the Dream Roll in plastic wrap and refrigerate for at least an hour.
Serving
  1. When ready to serve, dust with extra powdered sugar, slice, and enjoy!

Notes

This Dream Roll can be made a day in advance. It’s the taste that counts, and little imperfections add to its charm.
