Preparation
- Preheat the oven to 350°F (175°C).
- Line a 15 x 10 inch jelly roll pan with parchment paper, and spray it lightly with cooking oil.
- In a large mixing bowl, beat the eggs and sugar until they triple in volume.
- Gently fold in the flour, baking powder, and salt until just combined.
Baking
- Pour the batter into the prepared pan and spread it evenly.
- Bake for about 12-15 minutes, or until it springs back when lightly pressed.
- Let it cool for a few minutes, then dust a clean kitchen towel with powdered sugar.
- Carefully turn the cake onto the towel and roll it up from one short side to the other.
Filling
- While the cake cools, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake, spread the whipped cream filling over the top, and roll it back up without the towel.
- Wrap the Dream Roll in plastic wrap and refrigerate for at least an hour.
Serving
- When ready to serve, dust with extra powdered sugar, slice, and enjoy!
