Method
Preheat and Prep
- Preheat your oven to 350°F (175°C) and line a 9×9 baking pan with parchment paper.
Make the Crust
- In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Mix it until it resembles wet sand.
- Press this mixture evenly into the bottom of your prepared pan.
- Bake in the oven for about 10 minutes.
Prepare the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually mix in the dulce de leche and sugar.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Finally, fold in the melted chocolate chips for that extra oomph!
Fill and Bake
- Pour the filling over the crust and spread it evenly.
- Bake for 25-30 minutes, or until the edges are set and the center is slightly wobbly.
- Let it cool completely.
Chill Time
- Once cooled, refrigerate the bars for at least four hours.
Serve and Garnish
- Lift the bars out of the pan using the parchment paper, slice into squares.
- Drizzle extra dulce de leche on top and add a dollop of whipped cream if desired.
Notes
You can substitute regular graham crackers for chocolate cookie crumbs if needed. For softer cream cheese, microwave briefly to soften. Customize by adding nuts or changing chocolate types if desired.
