Ingredients
  

For the Cookie Base
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened Make sure it's at room temperature
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
For the Frosting
  • 1 cup unsalted butter, softened Also at room temperature
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • 3-4 tbsp milk Add more for a thinner frosting
  • Edible Easter egg candies (like chocolate or jelly beans) For decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking pan.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, mixing until a smooth dough forms.
  6. Spoon the dough into the prepared baking pan and spread it evenly.
Baking
  1. Bake for about 20-25 minutes, or until edges are slightly golden and middle is set.
  2. Let the cookie bars cool completely in the pan on a wire rack.
Frosting
  1. In a bowl, beat together the softened butter, powdered sugar, vanilla extract, and enough milk to reach desired frosting consistency.
  2. Spread frosting generously over the cooled cookie bars.
  3. Top with your favorite edible Easter egg candies.
Serving
  1. Cut into squares, share with family, and enjoy!

Notes

Chill the dough for about 30 minutes for thicker cookies. Egg substitutions: try 1/4 cup unsweetened applesauce or a flax egg. Variations: Use sprinkles or chocolate drizzle for decoration.
