  • 1 lb corned beef, chopped
  • 1 can (14 oz) sauerkraut, drained
  • 1 cup thousand island dressing
  • 8 oz Swiss cheese, shredded
  • 1 package (12 oz) rye bread, cut into cubes
  • 1/2 cup butter, melted
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine chopped corned beef, drained sauerkraut, and thousand island dressing. Mix them together.
  3. In a greased 9×13-inch baking dish, layer half of the cubed rye bread, followed by half of the corned beef mixture and half of the Swiss cheese. Repeat with remaining ingredients.
  4. Drizzle the melted butter over the top.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  2. Let it cool for a few minutes before slicing and serving.

Notes

You can substitute rye bread with pumpernickel or whole grain. If you enjoy extra cheese, feel free to add more between layers or on top before baking. Store leftovers tightly covered in the fridge for up to 3 days.
