Preparation
- Preheat your oven to 350°F (175°C). Grab your favorite roasting pan.
- Rub the beef roast generously with olive oil, salt, and pepper.
- Heat a large skillet over medium-high heat. Once hot, sear the beef on all sides until beautifully browned (about 3-4 minutes per side).
- In your roasting pan, toss in the diced potatoes, sliced carrots, and quartered onions. Spread them out evenly.
- In a bowl, whisk together the beef broth, minced garlic, Worcestershire sauce, and dried rosemary. Pour this mixture over the veggies.
- Nestle the roast right on top of the veggies.
- Cover the pan with foil and roast for about 2-2.5 hours, checking occasionally.
- Once the beef reaches an internal temperature of 145°F (medium rare) or 160°F (medium), it's ready.
Serving
- Remove from the oven and let it rest for about 15 minutes before slicing.
Notes
If your roast seems a little tougher than expected, a little more time in the oven can work wonders. Leftovers make for fabulous sandwiches the next day.
