  • 3 pounds beef roast (like chuck or sirloin)
  • 4 medium potatoes, peeled and diced
  • 3 large carrots, sliced
  • 2 large onions, quartered
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grab your favorite roasting pan.
  2. Rub the beef roast generously with olive oil, salt, and pepper.
  3. Heat a large skillet over medium-high heat. Once hot, sear the beef on all sides until beautifully browned (about 3-4 minutes per side).
  4. In your roasting pan, toss in the diced potatoes, sliced carrots, and quartered onions. Spread them out evenly.
  5. In a bowl, whisk together the beef broth, minced garlic, Worcestershire sauce, and dried rosemary. Pour this mixture over the veggies.
  6. Nestle the roast right on top of the veggies.
  7. Cover the pan with foil and roast for about 2-2.5 hours, checking occasionally.
  8. Once the beef reaches an internal temperature of 145°F (medium rare) or 160°F (medium), it's ready.
Serving
  1. Remove from the oven and let it rest for about 15 minutes before slicing.

Notes

If your roast seems a little tougher than expected, a little more time in the oven can work wonders. Leftovers make for fabulous sandwiches the next day.
