Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter and remaining sugar until light and fluffy.
- Add in the eggs, one at a time, then mix in the milk and vanilla.
- Gradually add the dry ingredients to the wet ones, mixing until just combined.
Baking
- Fill cupcake liners three-quarters full with the batter and bake for about 18-20 minutes, or until a toothpick comes out clean.
Tres Leches Soak
- While the cupcakes are baking, combine sweetened condensed milk, evaporated milk, and whole milk in a mixing bowl.
- Once the cupcakes are out of the oven and have cooled for about 10 minutes, poke several holes in the tops with a fork.
- Slowly pour the tres leches mixture over the cupcakes, allowing them to soak it all up.
Frosting
- In another bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
- Slather the whipped cream frosting over your cupcakes.
Garnish
- Optionally, sprinkle some cinnamon on top or add a berry or two for garnish.
Notes
These cupcakes get even better overnight as the flavors meld. Keep them covered if not indulging right away. You can sprinkle toasted coconut flakes or drizzle chocolate sauce for a fun twist.
