Preparation
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the vegetable oil, buttermilk, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
- Carefully stir in the boiling water until well combined.
- Pour the batter evenly into the prepared pans and bake for about 30-35 minutes or until a toothpick comes out clean.
- Once baked, let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Assembly
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Place one cake layer on a serving plate and spread a generous amount of whipped cream on top.
- Add cherries if desired and place the second layer on top, covering the entire cake with the remaining whipped cream.
- Top with chocolate shavings and additional cherries for garnish.
Notes
Make sure your eggs and buttermilk are at room temperature for best results. Consider using store-bought frosting for speed.
