Ingredients
  

For the cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup buttermilk At room temperature
  • 2 large eggs At room temperature
  • 2 tsp vanilla extract
  • 1 cup boiling water
For the filling and frosting
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • to taste Cherries and chocolate shavings for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the vegetable oil, buttermilk, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Carefully stir in the boiling water until well combined.
  5. Pour the batter evenly into the prepared pans and bake for about 30-35 minutes or until a toothpick comes out clean.
  6. Once baked, let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Assembly
  1. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Place one cake layer on a serving plate and spread a generous amount of whipped cream on top.
  3. Add cherries if desired and place the second layer on top, covering the entire cake with the remaining whipped cream.
  4. Top with chocolate shavings and additional cherries for garnish.

Notes

Make sure your eggs and buttermilk are at room temperature for best results. Consider using store-bought frosting for speed.
