  • 1 pound shrimp, peeled and deveined fresh or frozen works
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 Juice and zest of 1 lemon
  • 1/4 teaspoon red pepper flakes optional for a kick
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Preparation
  1. If you’re using frozen shrimp, be sure to thaw them first.
Cooking
  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about a minute until fragrant.
  3. Toss in the shrimp, sprinkle with salt, pepper, and red pepper flakes, and cook until the shrimp turn pink and opaque, about 4-5 minutes.
  4. Add the lemon zest and juice, stir to combine, and let simmer for a minute.
  5. Remove from heat, sprinkle with fresh parsley, and serve immediately over pasta or next to a veggie medley.

Notes

Don’t overcook the shrimp, as they can become rubbery quickly. Adding cherry tomatoes or spinach can enhance the dish's flavor and nutrition. A splash of white wine before adding lemon can elevate the dish.
