- If you’re using frozen shrimp, be sure to thaw them first.
Cooking
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and sauté for about a minute until fragrant.
- Toss in the shrimp, sprinkle with salt, pepper, and red pepper flakes, and cook until the shrimp turn pink and opaque, about 4-5 minutes.
- Add the lemon zest and juice, stir to combine, and let simmer for a minute.
- Remove from heat, sprinkle with fresh parsley, and serve immediately over pasta or next to a veggie medley.
Notes
Don’t overcook the shrimp, as they can become rubbery quickly. Adding cherry tomatoes or spinach can enhance the dish's flavor and nutrition. A splash of white wine before adding lemon can elevate the dish.
