Preparation
  1. Preheat your oven to 425°F (220°C) to give the sprouts a crispy edge.
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until well-coated.
Roasting
  1. Spread the Brussels sprouts flat on a baking sheet, cut side down. Roast for about 20-25 minutes, until browned and crispy.
  2. Check halfway through to prevent burning.
Making the Sauce
  1. While the sprouts are roasting, combine honey, minced garlic, and balsamic vinegar in a small saucepan over medium heat.
  2. Stir continuously until warm and slightly thickened.
Combining
  1. Drizzle the honey garlic sauce over the roasted Brussels sprouts while they're still hot and toss gently to coat.
  2. Garnish with sesame seeds if desired.

Notes

Ensure Brussels sprouts are not crowded on the baking sheet for optimal crispiness. The recipe can be made vegan by substituting honey with maple syrup.
