  • 1 pound ground turkey
  • 3 cups stale bread, cubed Day-old bread is great!
  • 1 cup chicken broth
  • 1/2 cup dried cranberries, roughly chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup onion, finely chopped
  • 2 tablespoons fresh parsley, chopped Or 1 tablespoon dried
  • 1 teaspoon dried sage
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 egg beaten Acts as a binder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cube your stale bread into small pieces.
  3. In a skillet, heat a splash of olive oil over medium heat, and add the chopped celery and onion, sautéing until soft, about 5 minutes.
  4. In a large bowl, combine the ground turkey, sautéed veggies, bread cubes, dried cranberries, parsley, sage, garlic powder, salt, pepper, and beaten egg.
  5. Shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes until golden brown.
  7. Let them cool for a few minutes before serving warm.

Notes

Make-ahead: Prepare a day in advance and store in the fridge. Can use fresh bread if stale is not available. Spice it up with nuts or cheese.
