Preparation
- Preheat your oven to 375°F (190°C).
- Cube your stale bread into small pieces.
- In a skillet, heat a splash of olive oil over medium heat, and add the chopped celery and onion, sautéing until soft, about 5 minutes.
- In a large bowl, combine the ground turkey, sautéed veggies, bread cubes, dried cranberries, parsley, sage, garlic powder, salt, pepper, and beaten egg.
- Shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes until golden brown.
- Let them cool for a few minutes before serving warm.
Notes
Make-ahead: Prepare a day in advance and store in the fridge. Can use fresh bread if stale is not available. Spice it up with nuts or cheese.
