Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste Salt and pepper
For the Bowls
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 2 cups cooked rice (brown or white)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
For the Cilantro Lime Drizzle
  • 1/4 cup Greek yogurt (or sour cream)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • to taste Salt

Method
 

Cook the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts with chili powder, cumin, salt, and pepper.
  3. Cook the chicken for about 6-7 minutes on each side, or until cooked through (internal temperature of 165°F).
  4. Once cooked, let it rest for a few minutes before slicing into strips.
Prepare the Cilantro Lime Drizzle
  1. In a small bowl, mix together the Greek yogurt, chopped cilantro, lime juice, minced garlic, and a pinch of salt.
  2. Stir until smooth.
Assemble the Bowls
  1. In individual bowls, start with a base of rice.
  2. Top with sliced chicken, black beans, corn, chopped bell pepper, and avocado.
  3. Drizzle generously with the cilantro lime sauce.
Garnish
  1. Sprinkle with fresh cilantro, add lime wedges on the side, and your fiesta is ready to be served!
