Preparation
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out your puff pastry sheet into a rectangle (about 10x14 inches).
- Spread the softened goat cheese evenly over the surface of the puff pastry.
- Dollop the fig jam over the goat cheese and sprinkle with thyme, salt, and pepper.
- Start from the long edge and roll the pastry tightly into a log.
- Cut the log into 1-inch slices to form the pinwheels.
- Arrange the pinwheels on a baking sheet lined with parchment paper and brush the tops with the beaten egg.
- Sprinkle additional thyme on top if desired.
- Bake for about 20-25 minutes until golden brown and puffed up.
- Allow to cool slightly, serve warm, and enjoy!
Notes
Puff pastry should be cold for best results. Store leftovers in an airtight container in the fridge and reheat in the oven to maintain crispiness.
